Colds and What I Cooked

For some reason I caught a gourmand bug with this bloody cold I’ve had. So here’s what I’ve made (and eaten)…

Anchovy, chilli, and mozzarella pizza.

Sainsbury’s Taste the Difference pizza base (I wasn’t so dedicated that I was going to make that from scratch… I still have a cold, right?!)

Salt packed Spanish anchovies

Taste The Difference tomato and garlic paste

Mozzarella cheese

Kalamata olives

Flat leaf parsley

Fresh red chillies

Chop up chillies, pit olives, soak anchovies, prepare ingredients as needed. Stack on pizza base. Bake at 200C for 8 minutes. Boom: Pizza Express, express.

Able & Cole Lazy Glazey Squash

Squash

Soy sauce/Balsamic Vinegar

Honey/Agave syrup

Ginger/garlic

Olive oil

Chilli powder

Fresh herbs

Cut up the squash. Stir up soy/balsamic, oil, ginger/garlic, and chilli in a bowl. Add the squash. Mix well. Put a frying pan on high heat, once hot, add your squash mixture and reduce to medium heat. Serve as a side or as a warm salad with ricotta, almonds, and cress à la me.

Warm Winter Beetroot, Orange, Cavolo Nero & Goat Cheese Salad

Beetroot

2 tbls Walnut oil

Goat cheese

1 Orange

Shredded Cavolo Nero kale

1 tbls Balsamic vinegar

1 tbls Honey

Walnut pieces

Boil the beetroot. While that’s occurrin’ section your orange over a bowl (to catch the juice). Mix your oil, honey, and vinegar into the juice bowl. Mix in the orange and Cavolo Nero. Chop up the cooked beetroot and crumble the cheese and walnuts on top. Serve immediately.

Pesto, Sundried Tomato & Cavolo Nero Pasta

300g Pasta

150 grams drained Sundried tomatoes

Cavolo Nero shredded

4 TBL pesto

Cook pasta. Stir in pesto. Steam Cavolo Nero for 5 mins. Stir in Cavolo Nero and tomatoes.

Open Faced Breakfast Sandwich of Godliness

Rye

Goat cheese

Sundried tomatoes

Roquette

Hard boiled egg (sliced)

Spread the cheese. Stack the others. Eat and expect a mess.

Look how thin I sliced that pear! Hellz yeah!

Wee Little Cheese Sandwich-lets.

Pear slices

Apple slice

Sliced strawberries

Ricotta cheese

Goats cheese

Balsamic vinegar

Roquette

Sage leaf

Rye bread

Honey

Black pepper

Cut rye slice in half. Spread one side with goats and one side with ricotta. Quarter it. On the goats pieces stack some strawberries. Add a slice if pear on top of one and some roquette on the other. Drizzle both with balsamic. Stack apple slice and one sage leaf on one ricotta sandwich-let. Stack a slice of pear on the other. Drizzle pear with honey and grind some black pepper on top. Feel really classy eating these.

Gingerbread Man Sandwiches

Store bought gingerbread men

Store bought vanilla ice cream

Scoop ice cream between two gingerbread men. Eat. Eat ice cream out of carton as you go. Dip gingerbread men in ice cream like chips ‘n’ dip. Tell yourself that eating these will help you run faster and/or will soothe your sore throat due to the presence of cream, and cold stuff, and ginger. Repeat as necessary.
